About the Farm

Four Generations of Stewardship. Our roots in Pentraeth run deep. Dafydd Thomas has farmed this land for as long as he can remember, following in the footsteps of three generations before him. It is a place of history and creativity; Dafydd’s great-grandfather was a renowned Welsh poet who wrote for the nation during the war.

Today, that creative spirit lives on through the distillery. Dafydd, a serial entrepreneur who also runs agricultural contracting and biofuel businesses, restored the farm’s 120-year-old stone farmhouse with his own hands. The distillery is the latest chapter in his family’s history, a way to ensure the farm remains sustainable for the future while producing something truly Welsh.

About the Spring

The Lifeblood of Our Spirit. Great whisky starts with great water, and ours is unique. The "Anglesey Spring" flows through the largest deposit of glacial gravel on the island, left behind by a glacier 10,000 years ago. Filtering through this gravel and a seam of sand from an underground lake, the water picks up minerals, resulting in a calcium content half that of milk. This acts as a natural softener, giving our spirits a distinctively creamy, smooth texture.

But accessing it wasn't easy. Abandoned for 30 years, the spring had to be manually restored. In a true labour of love, Dafydd dove into the freezing three degree water to pack blue clay seals around the rock by hand. Today, the spring flows naturally at a gallon a second, providing the crystal-clear water that forms the backbone of every bottle we produce.

About the Distillery

Small Stills, Big Ambition! Walk into our distillery, and you won't see a "cathedral of copper" like the Scottish giants. Instead, you will find a battery of small, 28-litre electric copper pot stills.

Designed for efficiency and resilience, this unique "micro" setup allows us incredible flexibility. If a still needs fixing, Dafydd can repair it himself without halting production, a necessity for a farmer who knows that machinery waits for no one. This system allows us to create small, experimental batches and ensures that we maintain total control over quality.

Unlike many craft brands that simply flavour industrial alcohol, we are proud to say that every drop of alcohol in an Anglesey Môn bottle is made here, by us, from scratch.
